Parmesan Reggiano is still produced today for the most part as it was eight centuries ago: the same ingredients, same production techniques, and same craftsmanship.

It is a completely natural cheese, the only one able to withstand a long aging process. Parmigiano Reggiano is "mature" when it has reached an age between 12 and 18 months; "old" when it is from 18 to 24 months; "aged" when it has passed at least two summers (from 24 to 36 months).

One of the characteristics of Parmigiano Reggiano cheese is its straw-yellow colour, which indicates that it comes from milk produced from animals fed with fresh fodder.

Another typical feature of Parmigiano Reggiano is its structure in "flakes." When it is mature, the cheese comes off in thin flakes that point to the center of the form.

Parmigiano Reggiano brings together doctors and restaurateurs, gourmet food experts and nutritionists, and is one of the few happy exceptions, very nutritious, tasty and full of flavor, and at the same time, it is easy to digest and assimilate.

Dieticians recommend it for children, convalescents, and the elderly. And, of course, it is particularly recommended for those who are watching their weight.
