Tuscany Pecorino DOP is the most characteristic dairy product of the region.

This cheese, a "tender" or "semi-hard" cream, is produced from whole sheep's milk from all over the region and in some neighboring towns in Lazio and Umbria.

The fresh type has a light straw yellow crust, white paste and tender to the cut, and a sweet flavor that goes well with salads, vegetables, and Tuscan bread.

The seasoned type has a deep yellow crust, or black or reddish, depending on how it has been treated (with tomato, ashes, or oil). The color inside is light yellow, and the flavor is intense, but not spicy.

It often comes grated on pasta dishes, but can also be enjoyed with salami and sausage, in slices, or served with honey, marmalade, fruit, or in-season vegetables.

It should be stored in a cool, dry environment; if placed in the refrigerator, it should be kept wrapped in the paper you purchased it in and in the least cold compartment.

In the Tuscan tradition, pecorino comes immersed in extra virgin olive oil along with pepper and bay leaf in a way that the cheese maintains the seasoning and enhances its characteristic flavors.
